We picked Paradiso for our Must-Visit Italian Gems list before we even heard about the latest pasta dish to come from the East Passyunk kitchen, but this seals the deal. Chef-owner Lynn Rinaldi sent us a photo of the new maccheroni alla chitarra presentation, which sees huge chunks of sea urchin and jumbo lump crab atop the hand-cut noodles.
Samuels & Son Seafood delivers live urchins to the restaurant, so the bright orange meat - known in Asian cuisine as uni - is ultra fresh. If you never tried it, think of the flavor of salty, snappy cucumbers, underlaid with a deep oceanic finish. Head down to the Avenue to give the new plate a try ($24; 215-271-2066).
