Charlie Trotter Protégé Michael Rotondo Lands at Parallel 37

There were big shoes to fill over in the kitchen at the Ritz-Carlton since long-time chef Ron Siegel left his post to join Michael Mina but those concerns seem to be assuaged with the announcement of his replacement, rising chef Michael Rotondo. Rotondo, is a protégé of Charlie Trotter (who most recently worked as chef de cuisine and executive chef before its closure) and also earned the title “Most Promising Chef” from the Bocuse d’Or organization. While the focus of the menu at Parallel 37, contemporary California cuisine, is expected to remain intact, we’re particularly excited to see what new tricks and hybrid vigor the Midwest-hailing chef brings to our ingredient-driven locavore genre. According to the hotel, he’ll bring a global approach and his own handprint to the restaurant’s a la carte and tasting menus in the coming weeks and months.
