Sbraga, we were struck by a simple-yet-not-obvious observation he made. If you start off a restaurant experience by being nice to your server, you’re much more likely to have a great night out.
This is not a purposeful thing, Cornell makes sure to stress, noting all patrons at Kevin Sbraga’s establishment get textbook proper service. But there’s a synergy that happens if guests come ready to enjoy themselves and let their server know. The server will be happy to show off and go the extra mile. The diner will reap the rewards.
If the circle of niceness results in a bigger tip at the end of the night, that’s just an added bonus. Might as well start your next meal with a smile - you’ll end up with a win-win situation.
