Somehow the two special Ceviche Nights at Mo-Chica, which served as a sort of preview for Ricardo Zarate's forthcoming Paiche restaurant, slipped through our fingers. We blame the holiday hustle and bustle. But it seems everyone went bonkers for the uni ceviche menu that Zarate created with Melisse's Josiah Citrin last week, and for last night's creations from Spice Table's Bryant Ng and Night Market's Kris Yenbamroong. We love this photo this photo of Ng (left) and Yenbamroong working the line in tandem, plating something like prawn ceviche and peanut sambal, or perhaps beef ceviche with roasted chili and rice powder. Can't wait to taste those dishes at either of their restaurants, or when Paiche debuts next year.
