It might look like it should be hanging on the wall in an art gallery, but if you can bring yourself to eat this beautiful plate of bay scallops at Lima, you will discover that it is a masterpiece in more than one sense. The traditional South American tiradito is prepared with a yellow aji peppers emulsion and umami salt. Creamy with a touch of spice, it is an unusual mix of flavours and texture, and the perfect example of Japanese influences found in Peruvian cooking.
