Cooking Under Pressure: The Nightmare Before Christmas at iNG


Chef Homaro Cantu has big plans. His resaurant iNG launches a new experimental menu every six week, he is starring in a behind-the-scenes television show that  the conception of each menu, and he is trying to rid the world of sugar via his brand of miracle berries called M Berry - a pivotal ingredient at the restaurant that allows for "flavor tripping" or turning sour/bitter flavors to sweet.

Last night, the first episode of the series "Cooking Under Pressure" premiered online along with the menu in the restaurant inspired by Nightmare Before Christmas. We went to Fulton Market to participate in the ultimate iNG experience - watching the episode and then eating the dishes created during the filming. Fresh off the success of Cantu's last Hollywood-themed menu (Scorsese), the team turned to the movie that allowed for a smooth transition from Halloween to Thanksgiving and Christmas. The menu used flavors of fall like pumpkin, baking spices and plenty of booze with the high-tech technique iNG pioneers. Making a dish that looks like Thanksgiving and tastes like Christmas, or represents Tim Burton's extravagant characters, takes a bit of finesse. The show narrates the trial-and-error process of creating the ten-course meal we enjoyed after the premier.
