Best Thing We Ate Last Night: Short Ribs at Wave

‘Tis the season for leafy greens, braised meats, hearty potatoes and putting some truffles on all of it. We kicked off the winter in style last night at Wave. Between dishes of roast pheasant, chocolate cake and a lot of wine, something that can only be described as a holiday miracle happened. A piece of short rib landed in front of us. This tender morsel of meat was sitting, almost seductively, in a fondue of Taleggio cheese and Swiss chard. The short rib was decorated with a crispy fingerling potato adorned with shavings of white truffle. Decadent is too pedestrian of a word to describe this dish. Gluttonous maybe captures the experience of eating a single bite of cheese-covered meat with a slight crisp from the chard. The potato was the perfect vessel for soaking up stray fromage, while also offering contrast from the rich meat. It was a hearty dish to be sure, but had all the flavors we crave in cold weather comfort food.
