Best Thing We Ate Last Night: Kimchi Ramen at Chuko

Though now there are a bevy of places in Brooklyn that offer ramen, Chuko in Prospect Heights was one of the first. Though some of its selections tend to skew more classic, last night we deviated from our typical miso order and went with the kimchi variety. As always, the noodles are perfectly done and springy, and the soup offers the ideal cold weather relief. Here a poached egg provides richness, while the fermented vegetables give it a pleasant tang, sourness and spice. The ground pork mixes well into the soup, adding flavor and texture to each bite. Simple enough to please purists and interesting enough to appeal to those who want to try new combinations, this is a dish to try come winter (718-576-6701).

  1. That does sound good. I often add kimchi and an egg to ramyun I review. What's even better is adding a little shredded cheddar - popular that way in Korea.
