Molecular gastronomy pioneer Wylie Dufresne is opening a second eatery in the West Village next year dubbed Alder. The new concept will still make use of his science-driven techniques, but apparently the restaurant will be more casual, taking inspiration from a traditional pub. The more casual setting makes sense as his wd-50 turns 10 next April. Many of the techniques he helped popularized are now used at mid-scale restaurants around town, so it's good to see him getting into that game to draw in an audience that may not want to drop big bucks. Alder is set to open in Spring.
