Preview Chat: Jose Garces on His New Cookbook

Iron Chef Jose Garces just released his new cookbook, and it’s a hefty one, split into five sections focusing on the cuisine of a specific region: Ecuador, Spain, Cuba, Mexico and Peru. We had the opportunity to sample some of the dishes from the beautifully photographed, 375-page volume last night at an event at JG Domestic, and we chatted briefly about The Latin Road Home and his plans for the future.

Zagat: Do you have a favorite section of the cookbook?
Jose Garces: I suppose Ecuador, if I had to choose. That’s where my family is from, so I have a special place in my heart for the food of that region.

Zagat: Did you do a lot of traveling for the book?
JG: The only place I went specifically for research for the cookbook was Ecuador. That was a really fun trip. I still have a lot of family there - aunts, uncles, cousins - so we just cooked and talked and had a good time. Came away with great results. I was also traveling in Spain pretty recently - the trip wasn’t focused on the cookbook, but it was all fresh in my mind.

Zagat: We’re glad you’re done traveling for a while and are back in your hometown of Philadelphia. Your very next restaurant will be here, right?
JG: Yes, in the Kimmel Center. I’m glad to be back in Philly, too. This new restaurant is going to be really cool, it’s - [glances at PR rep standing beside him] - I’m not really supposed to say too much about it. But I’m very excited. It’s going to be something special.
