And now we know. Next month sees the opening of John Salt - a new neighbourhood pub in Islington from the people behind The Owl and Pussycat in Shoreditch and The Fellow in King's Cross - where Spalding will take up a six month residency cooking for the 25-seater mezzanine restaurant overlooking the main bar.
His tasting menu (four, eight or 12 courses) at John Salt will include his signature 'chicken on a brick' - a London house brick coated in caramel glaze and then smeared with chicken liver parfait topped with sweet corn, pearl barley, edible flowers, celeriac purée and a red onion jam. The menu will change regularly, but you can expect creative dishes typical of Spalding like salmon cured and poached in maple syrup, salted almonds, lime cream and rotten mango juice.
