Best Thing We Ate In DC This Week: Vidalia's Sweetbreads and Waffles

Inspired by the mouthwatering photo of Vidalia’s sweetbreads and waffles, in the recent post of DC's Best Southern restaurants, we headed to this cosmopolitan retreat in the Golden Triangle. Seated at its welcoming bar, we were intrigued by the cocktail list, but opted for tasting pours of two of our favorite wines - a Sancerre (Sauvignon Blanc, Lauverjat, Sancerre, Fr.) and a California Pinot Noir (County Line, Sonoma Coast, CA).



The bread basket filled with corn bread, an onion focaccia and a pillowy, potato roll was too tempting to resist. We would go back just for another round - but when the chicken fried sweetbreads and waffles arrived, we were glad that we still had room.

Crunchy and flavorful, the sweetbreads were an enchanting accompaniment to the crisp, thick waffle. Bacon fondue added that extra special something to the dish that bacon always provides. Asparagus spears provided a colorful contrast. While the lemon caper veal jus sauce would make cardboard irresistible.  Given how delicious all the components of the dish were, it made a good thing, even better.
