Small plates as a trend will probably never wane. For chefs, it's a chance to explore different tastes and cuisines all on one menu. For restaurateurs, it's cost-effective. And for diners, well, we get to graze across a few plates at a time on a virtual global eating tour.   2. Shocking that Ink was not mentioned. My husband and I own a successful restaurant and have eaten at many, many 'small plates' eateries both in the US and in Spain. Ink is HANDS DOWN the best composed and best tasting meal(s) we have ever eaten!!!
