This is one of the fastest truck-to-brick-and-mortar turnarounds we've seen, but when an opportunity presents itself, you just have to, uh, roll with it. The cousins behind the Cousins Maine Lobster truck open a permanent location inside, of all places, the Liv Mixx nightclub in Old Town Pasadena tomorrow. We honestly can't picture eating lobster rolls and clam chowder in a cheesy loungey nightclub. Then again, no amount of blue lights and overly sweet vodka drinks will keep us from one of the best lobster rolls we've eaten. And knowing it's there every day and we don't have to chase a truck? Super bonus.

Hitting the streets only a few months ago, Cousins quickly became known for its rolls made with fresh lobster meat that's flown in daily - served cold with a little mayo on one, or hot and buttered on another - plus other New England specialties. With a new home comes new menu additions, too, including lobster mac and cheese, a lobster BLT, lobster Cobb salads, and even lobster ice cream. There will be other rolls with crab salad and shrimp, and yes, fried clams. Check out the opening tomorrow at 5 PM, and daily thereafter (Mon.-Sat., 11 AM-10 PM; Sun., 10 AM-9 PM).
