This week we stopped by new Dumbo eatery Governor for a video, and we haven't stopped talking about it since. Chef Bradford McDonald uses super-fresh local ingredients in his rotating menu, escalating them with smartly conceived modernist flourishes that won't have anyone rolling their eyes (foams and liquid nitrogen were absent as far as we could tell). We honestly had a hard time picking which dish was our favorite, as almost everything we tried was a true winner. We settled on the poached oyster toast with lobster emulsion and wild carrot blossoms - as the final days of summer are winding down, the briny flavors of the sea really sang to us. Its song? "Order another round..."
