Jerry Choinski and Etkin Tekin recently graduated Yale University. They were also alumni of the Yale Entrepreneurial Institute and one year ago put their business savvy into practice by opening The Little Salad Shop in New Haven, CT.
Their next entrepreneurial endeavor brings them to Chi Town in the form of a salad truck – or is it a small bus? The Little Salad Truck delivers custom salads with a choice of 45 ingredients and 17 dressings or pre-made salads such as The Bleu Buffalo, The Beet Haven, The Summertime, The Avocado All Day, and The Cobb.
The truck officially opened yesterday, and its movements can be tracked on Twitter.
