We've talked endlessly about East Coast-style seafood this summer, and yet we only had our first lobster roll today. Behold, the Connecticut lobster roll from Cousins Maine Lobster truck. For the uninitiated, the difference between a Connecticut and Maine lobster roll is temperature and fat - on a CT roll, the lobster meat is warm and drizzled with butter, and it's cold with a light swipe of mayonnaise in the ME roll. Both are perfectly delicious, but with only butter, you really taste the sweetness of the meat. And look at those chunks! Gorgeous, simple, perfect. Need one?
