Photo of the Day: Proof's Sandwiches

This is what you'll find if you walk into Atwater Village's Proof Bakery at the right time of day - plates piled high with sandwiches like salami with manchego cheese and chive butter, or spicy roasted eggplant with tomatoes and garlic spread (daily offerings are usually posted on Facebook). We, unfortunately, usually make it in when nary a crumb is left. Timing, they say, is everything. And here, if you want a sandwich on one of tose fabulous chewy baguettes, make sure you get there before 1:30 PM.
