The difference between flatbread and pizza, says
Nubar executive chef Bill Flumerfelt, is, well, a case of semantics. “It’s sort of [a] what’s-in-a-name kind of thing,” he says. But there do tend to be some differences. Flatbread can be more thin and crispy, and less chewy, than pizza, and is often grilled rather than fired in an oven.
