In true Aviary fashion, Grant Achatz and Nick Kokonas broke the news of Charles Joly’s appointment as beverage director at the cocktail mecca on Facebook last night.
Joly has been behind the bar at The Drawing Room since its opening six years ago. The move will be a change for him, as his style at the The Drawing Room focused on classic cocktails, according to Time Out Chicago. However, he has been training to prepare the innovative creations made at The Aviary. He recently took a two-week fellowship in London at 69 Colebrook Row, a bar using similar techniques in their experimental cocktail program.
Joly’s last day at The Drawing Room will be July 14, before he departs to New Orleans for Tales of the Cocktail. Upon his return to Chicago, he will begin work at The Aviary, and Christina DeLucca will take over his prior position. Therefor, anyone interested in sampling an authentic Joly creation should do so now before he slips into the velvet-roped Aviary.
His appointment is the result of the abrupt dismissal of their former executive chef, Craig Schoettler.
