Aspen Food and Wine: Jose Andres Dishes About His New Restaurant

This weekend at the Food and Wine Classic in Aspen, we caught up with Jose Andres, who, despite a late night out hosting a Spanish-style barbecue, gamely told us about his latest project. After recently opening a branch of Bazaar at the SLS Hotel Miami, he’s poised to head south to Puerto Rico at the Ritz Carlton Reserve in Dorado Beach.

The still-unnamed restaurant is slated to open in December. “It is going to be great. It is a very luxurious property,” Andres told us. “My concept is Puerto Rico meets Spain with spins on traditional Puerto Rican dishes. For example, we will have asopao and pork will be available in many ways. And because of the proximity to the sea, we will do a lot with Caribbean lobster. We are also going to have a food truck on the golf courses, because I am not only in the restaurant but I am curating other parts of the property food-wise.”
