The still-unnamed restaurant is slated to open in December. “It is going to be great. It is a very luxurious property,” Andres told us. “My concept is Puerto Rico meets Spain with spins on traditional Puerto Rican dishes. For example, we will have asopao and pork will be available in many ways. And because of the proximity to the sea, we will do a lot with Caribbean lobster. We are also going to have a food truck on the golf courses, because I am not only in the restaurant but I am curating other parts of the property food-wise.”
