The Best Thing We Ate This Weekend Off a Truck in Chicago

With the vendetta of rules and regulations limiting the mobility of food trucks - no food prep on the truck, don’t park within 200 feet of a retail space, don't selling food before 10 AM or after 10 PM - a hot meal from a truck can be hard to find.

Beaver’s Coffee + Donuts truck has found a loophole: with a catering license and deep-fryer as their only weapons, they're taking arms against the crusade, parking exclusively on private property. Thus, they're able to do on-board prep of fresh mini-donuts with gourmet toppings, available in a half dozen, a dozen or in a box of 30.

Their most popular topping is cinnamon sugar, but we recommend you get fancy: say the word S’mores, and the fresh-out-of the fryer pastries get covered with chocolate and marshmallow drizzle and then dusted with graham cracker crumbs. Nutella Dream combines strawberry with the sweet spread; Turtle is chocolate caramel and pecans; and PB&J is, well, self-explanatory.

Maybe it’s those tiny bites of deliciousness making the police look the other way?
