Richard Sandoval Will Open Peruvian Restaurant Raymi in June

Richard Sandoval is one busy restaurateur these days. The other day, we just reported that his Upper East Side joint Maya is closing for a makeover, which will reopen with a new tequila bar attached to the space. Today we've learned that he will open a new Peruvian restaurant and pisco bar dubbed Raymi at the beginning of the summer. The joint will be located in the Flatiron District and will be his first stab at the cuisine of Peru - the menu will also be influenced by the Spanish, Japanese and Chinese cooking. Of course, ceviche will be served, in this case from a large ceviche bar dishing out bites of seafood.

The liquor selection will include 30 house-infused piscos with flavors ranging from purple corn to apricot. With Peruvian import La Mar failing to really take off after its launch last year near Madison Park, the city is still looking for its flagship Peruvian haunt. We'll see if this one can take that title when it opens in June (43 West 24rd St.).
