Chalam Balam’s Chuy Valencia (one of our recent
30 Under 30 nods) is moving on from the acclaimed Lincoln Park digs, according to
Eater. With a wordily titled book in the works (
M.E.A.L.S.: Menus, Entrees, Anecdotes, Lies and Some Truth to Protect the Innocent and Equally Evil and Advantageous That Helped Me Out Along the Way), he sold his part of the business to partner Soraya Rendon and left the kitchen to sous-chef Natalia Oswald. Word is Valencia will open a cafeteria-type restaurant, in partnership with coffee guy Phil Tadros.
