Adriano di Petrillo, owner of Dri Dri - the popular Italian gelateria found in Portobello and Chelsea Farmer’s Market - has recently launched a cookbook and Dri Dri Everywhere concessions around London. Next up: a summer pop-up opening this Friday in High Street Kensington tube station. We sat down with him to get the inside, er, scoop:
Zagat: You’ve been busy!
Adriano: Yes, earlier this year we published our first cookbook and we’ve just launched Dri Dri Everywhere - a selection of retailers hosting a mini co-branded Dri Dri within their premises. At the moment you can find us around London at locations including Chop’d in BoxPark, Apostrophe, Bluebird and from next week at John Lewis and Peter Jones. Opening this Friday is our summer beach pop-up in Kensington Shopping Mall. We’re giving away free gelato all day Friday so come down and see us.
Zagat: What made you want to open a gelateria in London?
Adriano: Definitely the sunny and warm weather! No, honestly I grew up eating gelato in Italy and when I moved to London, I couldn’t find any that I felt was authentic, so I started making it myself.
Zagat: What is the difference between ice cream and gelato?
Adriano: Gelato uses milk as the main ingredient, as opposed to cream in ice cream, and also doesn’t have any air pumped into it. The result is a much creamier product with less fat, six-eight per cent as opposed to 18-24 per cent in ice cream.
Zagat: So, does that mean your gelato is healthy?
Adriano: Well, we don’t use any additives like emulsifiers, non-natural thickeners or colouring, which is why you can’t see the product on display. It's served from a traditional pozzetti counter. A word of warning: when you can see ice cream or gelato behind the counter, it definitely contains additives, otherwise it would melt. Also we only use organic dairy products and seasonal fruits.
Zagat: What is the most popular flavour?
Adriano: Biscotto and Salted Caramel are our bestsellers. My personal favourite is Crema, a frozen version of custard cream, which I have been eating since I was a child.
Zagat: And finally how much gelato do you eat every week?
Adriano: I try to stick to a regimented one cup per day...but quite often I indulge in more!
