The Lazy Ox, new chef Perfecto Rocher (a graduate of such culinary grandees as El Bulli and Manresa) is busily adding his own touches to the menu created by Josef Centeno (who left for his nearby Baco Mercat). Though it still includes Centeno classics like the Lazy Ox Burger with Cantal cheese, it's quickly becoming a realm of purées and emulsions - a touch of Ferran Adrià on the edge of Little Tokyo. Some early favorites include:
Crispy pork Boca bits with curry yogurt
Roasted Japanese eggplant with bonito flakes and yuzu kosho crème fraîche
Iberico fresco carpaccio
Salpicon with piquillo pepper and mandarin orange
Lazy Ox canteen chicken with lemon basil purée
And we're looking forward to trying his Huevo "Arzak" with French fry purée and chorizo oil, and his short ribs with rabbit liver and sunchoke purée. And he's just getting started...
