Yesterday marked the official opening of bi-level Publican Quality Meats. Located across from The Publican in the West Loop, it’s part butcher shop, part sandwich shop and grab-and-go market (selling the likes of fresh-baked goodies, artisanal pantry items, produce and housemade necessities such as stock). On the lower level, at some point, butchering classes and dinners are expected to take place. Many of the meats, butchered in-house, come from area farms. Meanwhile, coffee is a custom Intelligentsia blend – the perfect foil for prepared foods, which are expected to be served starting next week (835 W. Fulton Market; www.publicanqualitymeats.com).
