The Best Thing We Ate Last Night: Indochine's Steamed Vietnamese Ravioli

How on earth does a restaurant stay open for more than 25 years? Let's go a little deeper in Indochine's case. After dining there last night, we have to ask: how does a decades-old restaurant not only manage to stay open, but pack the house with a fashionable crowd on a Wednesday night when most other new eateries can barely fill 8 seats? Well, if we could answer that question, it's likely that we would have opened a place long ago. The menu has been remarkably consistent over the years, and with the bustling vibe it seems that sharing a bunch of items is really the way to go. We liked the steamed Vietnamese ravioli, which are presented on a bed of bean sprouts in a bamboo steamer and stuffed with chicken, shrimp, shallots and shiitake mushrooms.

The dish is served with a sweet dipping sauce, and we suggest pairing it with the ginger-spiked Gin Gin cocktail, which was recently added to the list for Fashion Week.
